Blueberry is rich in vitamins and antioxidants, great for your cardiac circulation system.
For the blueberry dressing:
½ cup blueberry
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar (use apple vinegar for a totally raw food version)
1 teaspoon maple syrup
½ teaspoon lemon juice
½ teaspoon chopped lemon
Lemon thyme
Salt and pepper
Blend all the ingredients.
Adjust with salt and pepper.
It will keep in the fridge for 3-4 days.
For the salad:
Salad leaves
Julienne cut carrots
Chunks of celery
Orange supremed
Walnuts
Other vegetables of your own choice are also fine!
