I guess  I’ll never post another recipe as simple as this: a single ingredient and only one thing to do!
Coconut butter is different from oil as it keeps fibres, and its taste is more intense and fragrant.
It’s great in raw cakes.
Your DIY version will not be as creamy as the one you buy in shops; let’s say that it is an excellent replacement.

 

At least 3 cups shredded dried coconut

 

Blend for a few minutes, stopping every now and then to scrape the sides of the blender.
After 3 – 4 minutes, the paste will begin to leak oil: this is good, so go on until the whole is completely liquid; this may take about 10 minutes.
Pour into a glass jar: a few hours later, it will start to harden.
It will keep out the fridge for around four weeks.
