I really love to mix fruits and veggies.
This is a fresh salad with an excellent combination of ingredients preserving each single flavour.
For 2-3 servings:
1 fennel, shaved thin on a mandoline
½ green apple cut into cubes
2 tablespoons walnuts cut into pieces
1 tablespoon red onion, sliced very thin on a mandoline
1 tablespoon dill
Extra-virgin olive oil
Salt and pepper
Mix fennel, apple, onion, nuts and combine with the other ingredients.
