watermelon gazpacho

Red Onion and Cilantro

This might be the last recipe in the “fruit of the summer” series.
I’ll bet you know what I’m talking about…


For 2-3 servings:


1 cup watermelon pieces
2 ripe tomatoes cut into pieces
1 teaspoon red onion
¼ red pepper
½ cucumber
1 tablespoon lime juice
1 teaspoon grated lime peel
1 teaspoon chopped cilantro
Salt and pepper
Fresh chili 


Cut half of the pepper and the cucumber into cubes (use them with chopped cilantro to garnish).
Put the other ingredients into blender and blend until you get a smooth cream, keep in the fridge.
Pour onto the serving dishes and decorate with pepper, cucumber and cilantro.
Serve cold.
