This recipe is so simple that it’s nearly a shame.
The sweet-savoury combination is pleasant, refreshing and really light if you love onions.
And it’s without fat!
For 12 servings:
1 big slice of watermelon
2 tablespoons red onion, sliced very thin
2 tablespoons lemon juice
2 tablespoons minced mint
1 tablespoon minced dill
2 teaspoons lemon zest
Salt and pepper
Marinate the onion with half of the lemon juice and a pinch of salt.
Keep in the fridge for at least half an hour, or even better a couple of hours.
Cut the watermelon into small pieces, mix very well with lemon zest, remaining lemon juice, mint, fennel, the marinated onions and the salt and pepper.
Keep in the fridge for 20/30 minutes to allow a perfect combination of flavours.
