avocado sauce zoodles

                                         Almonds Capers

Zoodles:

 

2 zucchini

 

Prepare the noodles without peeling the zucchini using a spiraliser machine or alternately a julienne cutter

 

Sauce for 3 servings:


1 ripe avocado
2 tablespoons almonds (+ 1 tablespoon chopped for final decoration)
½ scallion
1 tablespoon lemon juice
salt and pepper

 

Cut the avocado, remove the pit and peel it.
Mix all ingredients and blend it.

 

For the garnish:
1 tablespoon minced parsley
1 tablespoon red bell pepper, clean and cut into small cubes
1 tablespoon chopped capers
