banana chia pudding

 

Chia seeds come from a plant of the same family as mint, they are originally  from Central America and were known by Aztecs long before Columbus.
They are extremely rich in omega-3, antioxidants,  calcium, proteins, fibres and vitamins.
Wet seeds turn into a sort of jelly, ideal to make sauces and puddings.

For 1 person:
1 cup almond milk (or from the nut you prefer)
¼ cup chia seeds
1 banana
¼ teaspoon vanilla extract

Blend everything but the seeds.
Add them and mix carefully.
Keep it in the fridge for half an hour.
Garnish with cocoa nibs and fresh fruit.
