Morocco is a wonderful country.
It always surprises me with his perfumes, his colours, the kindness and open-heartedness of the people and above all the light,  here is really special.
This time I was surprised and inspired to create a raw version of a classic of the moroccan culinary tradition: Amlou, a toasted almonds, Argan oil and honey spread, they usually serve for breakfast.
Of course my version is raw and vegan, I also add some fresh chilli to create an unexpected version.


For a small jar:

1  cup almonds
2  Tbs Argan oil
1  tsp agave
½  fresh chilli, deseeded and finely chopped
Pinch of salt


Blend almonds and oil until a smooth cream is achieved.
Add the other ingredients and mix well.
It keeps in the refrigerator for up to three weeks
