This pesto is an excellent salad dressing: I served it with a simple lettuce, tomato and alfa-alfa sprouts.
It is also quite good with more elaborated dishes and on its own.
For a nice pesto cup:
1 cup basil leaves (well pressed)
4 ripe figs
2 tablespoons walnuts
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
¼ teaspoon salt
Blend all the ingredients to the desired consistency.
It will kept in the fridge for a couple of days.
