A fresh sauce, so rich in aromas.
In my opinion, it matches extremely well with the sweetness of the sweet potato as enriched by the cilantro, a herb which I strongly support after many years of troublesome relationship.
It does not contain added fats or oils, except the good ones of the avocado.
For 2-3 servings:
2 tablespoons lime juice
1 tablespoon orange juice
1 tablespoon grapefruit juice
1 teaspoon lime peel
½ fresh chili pepper
1 tablespoon chopped cilantro
Blend everything but the chopped cilantro, which must be added at the end.
Noodles for 2-3 servings:
1 sweet potato, peeled and spiralized or cut into small stripes with the potato-peeler.
Combine sauce and spaghetti just before serving.
