This recipe combines tomatoes with almonds, which are full or proteins, fibers, minerals and fats and it is really healthy for your heart.
Basil adds further freshness to an already fresh combination, which is perfect for summer!
For 5 medium sized tomatoes:
⅓ cup almond, soaked for 8 hours and without peel
1 teaspoon nutritional yeast
4 basil leaves
1 teaspoon lemon juice
1 teaspoon extra-virgin olive oil
¼ teaspoon salt
Peel the almonds than blend all the ingredients adding a teaspoon of water at a time until the desired consistency is achieved.
Add a couple of chopped basil leaves.
It will keep in the fridge for 3-4 days.
