A quick salad dressing which is good for every kind of vegetable.
Emulsion makes it creamy without using a lot of oil.
This is a perfect dressing for a fruit salad.
¼ cup extra-virgin olive oil
2 tablespoons orange juice
1 tablespoon lemon juice
1 tablespoon grated ginger
½ teaspoon agave
1 teaspoon chopped chives
Salt and pepper
Blend citrus, ginger, agave, salt and pepper, slowly adding olive oil to emulsify.
Remove from blender and add chives.
It keeps in the fridge for 2 days.
