Date paste is a 100% natural sweetener (remember to pick dates not coated with sugar nectar: reading ingredients carefully can be more important than reading recipes!)
I like date paste as a replacement for agave nectar, so easy to make and versatile.

1 cup natural pitted dates
¾ cup hot water
Soak dates in water for 15-30 minutes.
Blend the whole into a smooth cream.
You can add more water for a more syrup-like consistency.
It will keep in the fridge for about 1 week.
