AKA Italian Bento Box

You can easily give a twist to your lunch break salad.
Do not skimp on colors here: the more, the better!

For 2 servings:

2 handfuls of season salad (here: a mix of lettuce and radicchio)
1 carrot, cut into stripes with a potato-peeler or a mandoline
Red cabbage, cut very thin with a mandoline
2 celery stalks cut into cubes (leaves are for the next juice)
Alfalfa sprouts
Few capers

Everything must be combined with this favorite dressing of mine:

For 1 big salad:

2 teaspoons nutritional yeast
1 teaspoon extra-virgin olive oil
1 teaspoon flaxseed oil
1 teaspoon tamari
1 teaspoon lemon juice
½  teaspoon agave nectar

Shake all ingredients into a smooth cream (I usually use a glass jar).
Add your favourite seeds or nuts, or even better flaxseed crackers to make this salad even “happier”!
All your workmates  will be jealous of this type of bento-box.
