Beetroot dip

I like those strong, no compromise colours and flavours of winter.
Beet has a special place among my “cooking gods”: I adore the flavour, and the colour hypnotises and enchants me.
This is a really nice sauce which is good for salads, as companion for a dip or… You tell me, as I am sure that you are going to find the right place on your table for it!

 

2 cups of small pieces of beet
⅓ cup tahini
1 tablespoon chopped large onion (or garlic)
1 tablespoons tangerine juice
1 teaspoon tamari
1 teaspoon apple vinegar
Salt and pepper

 

Blend all the ingradients
It will keep in the fridge for 3-4 days.
